Faro has a question.
what ruins a container of coffee?
not the heat. not the damp.
whatever was in the container before it.
green coffee absorbs smell as easily as it absorbs moisture. hides, chemicals, rubber, dried fish. enough of it stays in the floor and the door seals to ruin an entire load of beans that were perfect when they were bagged.
and you cannot air out a coffee bean.
which is why somebody climbs inside the empty container before it gets loaded, looks around, and smells it. sounds unscientific. saves the cargo.
