It’s one of my favourite curries and I’ve tried my best to do justice to it. Some of the things that I learned and realised while making this over time is that:
1. Cooking the curry initially in low flame (especially if it contains tough meats ) tenderises it nicely while retaining the moisture and all the infused flavours to give you melt-in the mouth meat. Cooking the curry in high flame throughout just evaporates the liquid faster and result in a dry curry with very chewy meat.
2. Roasting the spices lightly especially the curry powders even if they’re already roasted, give you a very rusty-deep red curry with so much more flavour! You can also adjust the spice level☺️
3. It is best to cook until the oil separates from the liquid.
4. I personally believe that it’s best to add coconut milk towards the end when most of the boiling has been done, to prevent it from curdling.
5. The curry is best done in a clay pot and if it’s not feasible then a non-stick pan and wooden spoons. It’s best to avoid aluminium. The clay pots add their own earthy flavour to the curry and you have to try it to know what I mean☺️
6. I added fenugreek seeds, garlic and ginger as they help prevent gas and bloating from eating foods like cuttlefish but also because they have numerous other health benefits! It’s best not to skip them.
7. I did not add any water to this curry and all the liquid was released by the cuttlefish itself! If you add water on top of that, you risk diluting the curry flavours! Not adding extra water also means that you retain the seafood flavour and smell of the cuttlefish which makes it taste 💯 better!
