Having enough data while you travel is important. International phone plans are expensive and don't always provide the service you need. So do what us expats do instead and pick up a sim card on the local market. I always buy an unlocked phone, but if you are locked into a contract don't fret. Most carriers will unlock your phone after period of time if you ask them to. Then you can add a sim from a local provider with enough data to last your whole trip for a reasonable rate.

Greece no longer requires an international drivers license to rent a car and drive in Greece. So now you can see Greece Like an expat.
While there are many ways to travel, being able to drive around the country on your own terms is in this expats opinion the best way. Public transport may be fine for smaller islands in Greece, but larger islands like Crete and so many things to see on the mainland, driving really is the way to go.
If you don't want to rent a car at every island many Ferry's allow you to take your vehicle for a small extra charge. Just drive on and drive off.

With the world opening up again many people are looking to travel, but what places are open and what places still need time to recover. This New York Times article shares which countries are open to Travel by US Citizens.

For Americans eager to resume international travel, here are the countries that currently allow U.S. citizens to enter, though there may be restrictions, including vaccine requirements.
