This village in Nepal, Jaubari in the Eastern himalaya close to the Indian border offers a beautiful experience hiking on trails that offers stunning landscape, views of the Himalayas, a mix of daphne, rhododendron, magnolia, oak and malingo community forests. It's just a stunning place to unwind and hike, but it's even more special when you get a chance to track and spot a Red Panda making it more memorable and spectacular. note: the Red Panda sighting is not guaranteed.

The making of khuri, a millet crepe with a filling of veggies, churpi cheese and butter, a quintessential part of Lepcha cuisine that has seen a resurgence in kitchens the past few years. Premit and Thuli bari showed us their version of khuri during our stay at Moonbeam. A millet batter from homegrown millet, is prepared with the right consistency - slightly on the runnier side to make the wrap. Veggies of choice are steamed - in this case, freshly plucked mustard greens/ rayo saag and cabbage. The secret is a generous dollop of butter and churpi cheese, rounding up the flavour profile by bringing a bit of richness. We thoroughly enjoyed this for breakfast paired with an addictive dalle-tomato chutney and remains one of our favorite meals to start the day.

The lesser explored parts of Kalimpong. It's been an absolute delight walking through a private tea-garden in the outskirts of Kalimpong at Nim b***y. Besides the tea and stunning landscape,it's been wonderful birding in the region. Of course the people and culture makes the place special as well.

We visited Pakang under Gitabling, close to Kalimpong yet feels so far away, the silence there was so loud. An absolute delight not to hear the sounds of vehicles/bikes et al
We went there in particular to visit Sweta, who is very enterprising. She was kind enough to take time out and show us her farm and spend time sharing stories about the place. Lunch cooked on firewood which we had in the bhansaghar was delicious. Came back with a whole lot of farm produce and ideas after our conversation with her. We hope to soon work out an experience here to enable our guests to explore the unexplored. ..

We've been seeing the Great Hornbills a lot more regularly than before, unsure what this pattern indicates but it's good to know that they're also referred to as 'farmers of the forest', and happy to see them around. ..

A beautiful morning spent in the cool mountain filled air, in silence and gratitude. The views from Kalimpong are a treat as you can enjoy it without any crowds.
