The chemistry of garlic is complex and dynamic.
Let us briefly touch upon 3 fundamental constituents and the role they play in taste and therapeutic effect.
The sulphur compound allicin and its derived relatives are substantially responsible for garlic's pungently complex flavor and aroma as well as for a substantial amount of its therapeutic benefit, yet a whole clove of garlic contains no allicin and has essentially no aroma.
How can this be?
Allicin is only created when the enzyme aliinase interacts with the sulfur compound alliin.
When aliinase and alliin are brought together, the creation of alliin occurs with great rapidity.
Alliinase and alliin are held in isolation in separate cells of the garlic clove and are only brought together when the cell walls are compromised, such as occurs with crushing, chopping, slicing, and biting.
Try this.
Smell a whole healthy clove of garlic, then smash it with the flat of a knife and smell again.
The aroma instantly goes from nothing to intensely pungent.
The creation of allicin happens that quickly.
How very fascinating is that?!!

Here at Rooted Gardens, our cloves have been pushed deep into the dark soil and are waiting for some cooler weather so they can sprout some roots!

Beautiful cured garlic bulbs.
This variety is "Music".
This italian variety boost a delicious, spicy flavor when raw, and a rich, sweet and caramelly one when roasted.
Its bright white bulbs have a tint of pink and brown on the clove skins, and its large cloves are easy to peel.
This porcelain-type garlic takes its name from Al Music, who brought it to Canada in the 1980 from his Italian homeland.
There are 5-8 cloves per bulb.
Store on a countertop in a well ventilated area.🧄🧄🧄🧄🧄

This weather is perfect and now is the time to plant garlic!

Rooted Gardens offers the porcelain variety, organically-grown, Music.
Music is prized for its medium spicy, huge cloves.
The size of the cloves help with overwintering , (great for Northeastern growers),and gives plants the energy they need in spring.
The bulbs are white in color with tinges of purple, and consist of 4-6 plump cloves per bulb.
Stores excellent for up to 6 months if handled properly at harvest.
We offer seed garlic in 1/2 pound and pound quantities.
