“It Looks Healthy… But Have You Checked the Sodium?”

We walk into a truck stop trying to do better.

We choose the salad.
We grab the spinach wrap.
We pass the fried food.

But here’s the part most of us forget:

Healthy-looking does not automatically mean heart-smart.

Some grab-and-go wraps and salads can contain 800–1,500 mg of sodium in a single package.

That’s half — or more — of your daily limit.

Banana who? 🍌
You want me to pay what for an overripe banana?

How many times have you walked into a truck stop trying to eat better—maybe because you want to live longer, maybe because you actually care about your health—only to see a spotted, overripe banana priced like it’s premium fruit?

Two for $2.
Two for $2.50.

I don’t even like paying that when the fruit is in prime condition.

But charging $1.50+ for overripe fruit just because drivers are on the road?
That’s not “healthy options.”
That’s convenience pricing bordering on exploitation.

If you can, skip it.
Use a grocery app, delivery, or ride-share and buy real fruit at real prices.

Drivers already sacrifice enough.
Overpriced bananas shouldn’t be part of the job.



And before someone says “it’s better than nothing” — no.
Healthy eating isn’t just about availability.
It’s about quality, pricing, and honesty.

Calling something “healthy” doesn’t make it worth the price if the quality is already declining.

Well since I’ve been sitting in KY since Saturday morning, waiting for Fern to get the heck on….I’ve made the following:

🍌 Sourdough Discard Banana Bread (Truck / Lunch-Pail Oven)

Pan: RoadPro foil pan (mini loaf)
Oven: Lunch-pail oven, ~300°F



Ingredients

Dry Ingredients
• ½–¾ cup all-purpose flour (start with ½ cup) note: I used whole wheat flour
• ½ tsp baking soda
• Pinch of salt
• Optional: pinch of cinnamon

Wet Ingredients
• ½ cup sourdough discard (previously fed; not fed the same day)
• 1 ripe banana, mashed
• ¼ cup sugar (white or brown)
• 2½ tbsp oil or melted butter
• 1 small egg (or ½ large egg)
• Optional: ½ tsp vanilla

Add-ins
• 2–3 tbsp chopped nuts (added last)



Instructions
1. In one bowl, mix all dry ingredients.
2. In a separate bowl, mix all wet ingredients.
3. Add wet ingredients to dry and stir just until combined.
Batter should be thick but pourable.
4. Fold in nuts gently.
5. Lightly oil pan and fill ½–⅔ full.
6. Loosely cover with foil.
7. Bake at 300°F for 65–80 minutes.
8. Turn oven off and let loaf rest inside 10 minutes.
9. Remove and cool 20 minutes before slicing.



Doneness Check
• Toothpick comes out with moist crumbs
• Center springs back lightly
• No wet batter in the middle



Notes (Accuracy Section)
• Sourdough discard is a wet ingredient → measure in a liquid measuring cup.
• “Previously fed; not fed the same day” means discard that was fed earlier (days prior) but not refreshed right before baking.
• Low temperature + foil is ideal for lunch-pail/truck ovens.
• Flavor and texture improve as the loaf cools.
