Yellow Belly Flounder (Rhombosolea leporina)
Flat as a pancake and perfectly camouflaged against the seafloor, Yellow Belly Flounder is certainly one of the most unusual fish on the menu.
It begins life swimming upright like a typical fish, but as it develops, one eye gradually migrates across its head, allowing it to lie flat on the seabed with both eyes peering upwards. This remarkable adaptation makes it a highly effective - albeit quirky-looking - ambush predator, feeding on small crustaceans, worms and other bottom-dwelling creatures.
π½οΈ Our serving suggestion
Yellow Belly Flounder is prized for its delicate flavour and fine-textured white flesh. It is also wonderfully easy to cook. Lightly score both sides with a sharp knife, spread some garlic butter & seasoning into the cuts and bake in the oven until tender. Add a squeeze of lemon and the flesh is ready to pick off the bones. Throw in a crisp salad and / or some hot chips β and you are ready to eat.
