The Colombian countryside moves at its own pace. While some farms invest in bioreactors for advanced fermentation, at The Waterfall the focus is elsewhere — upgrading mechanical drying, building modular African beds, turning a simple structure into a proper camp for pickers during harvest. It might sound modest. But for Osbelio, Mateo's dad, it's ingenuity, craftsmanship, and pure pride.

El campo colombiano se mueve a su propio ritmo. Mientras algunas fincas invierten en biorreactores para fermentaciones avanzadas, en La Cascada el foco está en otro lado — mejorar el secado mecánico, construir camas africanas modulares, convertir una estructura sencilla en un campamento digno para los recolectores en cosecha. Puede sonar modesto. Pero para Osbelio, el papá de Mateo, es ingenio, artesanía y orgullo puro.

Behind every great coffee there are great people and Is Osbelio, Mateo's dad, is absolutely one of them. He gives everything to his farm and, despite being close to the city, faces the same challenges as the most remote farms out there. Watching him climb every slope while explaining each varietal is genuinely inspiring. Hearing him break down every lot, pure admiration. A farm like this can only truly be understood by living it.

Detrás de los grandes cafés hay grandes personas y Osbelio, el papá de Mateo, es una de ellas. Le entrega todo a su finca y, aunque está cerca de la ciudad, enfrenta los mismos retos que los cafetales más inhóspitos. Verlo subir cada pendiente mientras explica cada varietal despierta una envidia sana. Escucharlo detallar cada lote, pura admiración. Una finca así solo se entiende viviéndola.

Walking through the drying area of The Waterfall farm with Mateo's dad, a curious little device caught our attention — a gray cube next to a humidity sensor. With a big smile he told us: "Mateo, all the way from China, knows exactly what's happening here. It's like this farm is in China too!". This is why this farm has a special place in our hearts, even when Mateo is thousands of kms away selling coffee, he can't stop being a coffee grower.

Caminando por el área de secado de la finca La Cascada con el papá de Mateo, un pequeño artefacto llamó nuestra atención — un cubo gris junto a un sensor de humedad. Con una sonrisa enorme nos dijo: "Mateo, desde allá en China, sabe exactamente lo que está pasando aquí. ¡Es como si la finca también estuviera en China!". Por eso esta finca tiene un lugar especial en nuestro corazón — aunque Mateo esté a miles de kilómetros vendiendo café, no puede dejar de ser caficultor.

Sixty years ago, this was a commodity farm.

The infrastructure at Finca Milán (the old wooden ramadas, the stone foundations) has been here for six, maybe seven decades. Most people would have torn it down and started over.

They didn’t.

Instead, they built something new inside something old. A processing center designed for specialty coffee, engineered around 60 years of existing walls, beams, and memory. Capacity for 20,000 kilos of cherry a day. Multiple fermentation routes. Technology brought in from Brazil that doesn’t exist anywhere else in Colombia.

The easiest path would have been demolition. But the story of Finca Milán is precisely that they chose to respect history and legacy, a more interesting road, and built something that couldn’t have existed in any other way.

What started as a commodity farm is now one of Colombia’s most technically advanced specialty operations — 20,000 kilos of cherry processed daily, 25 varieties grown, a custom-built fermentation center designed from the ground up.
