As the demand for high-quality grappa production continues to grow, DES has developed a modern column still created to answer the needs of both established distilleries and producers taking their first serious steps into this category.

This special DES modern column still was designed for efficient pomace distillation and maximum flexibility during production. The first version of the system was made with a 500 L capacity and equipped with two different column types chosen by the customer: the Aroma Max column and the Bubble Plate column.

Each of them brings a different character to the final distillate.
The Bubble Plate column helps create a softer, smoother grappa profile, while the Aroma Max column is designed to preserve and highlight the aromatic potential of the raw material.

The system is built from stainless steel and the purest copper, and designed to process 300 kg of pomace in a single run. Inside the copper pot, there are three stainless steel baskets, each with a 100 kg capacity. For producers who need a larger output, the system can be expanded with up to three additional 500 L pots, allowing all four units to run at the same time and process up to 1200 kg of pomace in one distillation cycle.

The exterior is insulated to reduce energy loss, while the process itself uses direct steam injection, moving from the bottom of the pot through the pomace, connecting pipe, column, and finally to the condenser.

One distillation cycle takes approximately 3 hours.

To make operation even more practical, the entire still is equipped with a CIP automatic cleaning system. Columns, dephlegmator, condenser, and reflux tank can all be cleaned quickly and efficiently using a pump working at 4–6 bar pressure.

Two weeks ago, our journey took us all the way to Iceland, to Bruggsmiðjan Kaldi, the iconic craft brewery in Árskógssandur. A place built on pure northern nature, bold brewing, and the kind of energy that makes you want to create something new.

Kaldi is now expanding beyond beer and stepping into the world of spirits, and we’re proud they chose DES for that next chapter. Their new setup is a DES 200 L modern column still, equipped with a Bubble Plate column, an Aroma Max column, and a botanical basket, a configuration made for learning, experimenting, and developing future releases with serious consistency and aroma control.
