Canadian creator and MasterChef Canada contestant Dre Pao has called Murcia home for the past three years, and during his journey on Canada’s biggest cooking competition, he shared how life in the Region has influenced the way he approaches food and creativity.

What happens when two iconic food cultures collide…? 🇪🇸🇬🇧👀🐟🍟

In the first episode of Beyond the Plate: Murcia, we started with one of the Region of Murcia’s most traditional dishes: Caldero del Mar Menor; a recipe born from the fishing communities of the Mar Menor, with its unmistakable flavours of fish, rice and ñora peppers.

🇬🇧🇪🇸Then and gave it a British twist…

They transformed Caldero into their own take on fish & chips, while finding ways to bring the two cuisines together throughout the entire dish. They incorporated mushy peas into the Caldero rice in place of the traditional tomato, battered and fried the fish, and created both a mushy pea alioli and tartar sauce to bring it all together.

The idea wasn’t to replace either tradition, but to celebrate both. Beyond the Plate is about respecting where food comes from, then thinking completely outside the box… showing how different cultures, flavours and traditions can come together in unexpected ways.

This is Caldero del Mar Menor… and on Episode 1 of Beyond the Plate, is trying it for the very first time! 🤯

Born from the fishing traditions of the Mar Menor and its coastal communities, Caldero is a deeply Murcian rice dish traditionally prepared with fish, ñora peppers, garlic and a rich fish broth. Its name comes from the caldero, the cooking pot historically used by fishermen to prepare the dish, turning the ingredients available from the day’s catch into something that would eventually become a symbol of the cuisine of the Mar Menor.

Before Dre and Patry get creative by spinning the mystery wheel and reinventing the dish, they have to experience the traditional plate and understand what has made it such an important part of Murcian gastronomy!
