Château d’Yquem.

The only Sauternes estate ranked Premier Cru Supérieur, a category of its own.
What’s in the glass starts with something most w**emakers spend their whole life trying to avoid, a fungus called botrytis.
In Sauternes the mist off the Ciron does something different to it. Noble rot, they call it. Shrivels the grape, concentrates the sugar, keeps the acid underneath.
Some vintages, Yquem decides it doesn’t meet the standard and skips the release entirely.

Two brutal heatwaves back to back. Grapes going into survival mode. Estates spraying natural clay on the vines to shield the fruit from sunburn. Some w**emakers floating the idea of harvesting at night. The Right Bank got some rain this week but another heatwave is already on the way.
