Easy & Delicious Fish Fry 🐟🔥

Start by adding 1 tbsp Kashmiri chilli powder, 1 tsp turmeric powder, 1 tsp black pepper powder, 1 tsp coriander powder, salt to taste, a squeeze of fresh lemon juice, and a few curry leaves to a blender. Blend everything into a smooth paste.

Coat the fish pieces generously with the masala and marinate well. 🌿🐟

For extra flavour, wrap the marinated fish in a banana leaf and let it rest for a while. Then fry the fish in hot coconut oil until beautifully crispy and cooked through. 🤤🔥

Serve hot with rice or your favourite side dish and enjoy! ❤️

Kerala-Style Sardine (Mathi) Fish Curry ❤️🌴

Today, my Ammamma and I are making a delicious, traditional Mathi Fish Curry! 🥰

Start by cleaning ½ kg sardines (mathi) thoroughly and keep them aside.

In a mortar and pestle, crush garlic and a small piece of ginger into a paste.

Heat 2 tbsp coconut oil in a man chatti (earthen pot). Add a pinch of fenugreek seeds and let them splutter. Then add the ginger-garlic paste and sauté well.

Add 2–3 slit green chillies, followed by 2 finely chopped onions and a little salt. Sauté until the onions turn golden brown. Add 2 finely chopped tomatoes and cook until soft and golden.

Push everything to the side and add:
🌶️ 1 tbsp Kashmiri chilli powder
🌼 ½ tsp turmeric powder

Lightly roast the spices, then mix everything together. Add a little water and stir until you get a thick, jammy masala.

Now add the soaked tamarind water, followed by some more water. Let the curry come to a good boil.

Gently add the cleaned sardines and cook until the fish is perfectly done and the flavours come together. 🤤🐟

Serve hot with kappa (tapioca) or your favourite side dish! ❤️

Simple, comforting, and full of that authentic Kerala flavour. 🌴✨

Onam Special Carrot Palada Payasam 🥕🥛✨

Today, me, Achan & my brother cooked together, and we made a 5-litre pot of Onam Special Carrot Palada Payasam! ❤️🌸

🥕 1.5 kg carrots — peel, clean & pressure cook with 2 cardamom pods for 1 whistle. Strain the excess water and blend into a smooth, lump-free purée.

🍯 In a big uruli or non-stick pot, caramelise ½ kg sugar. I recommend avoiding steel/aluminium as it can get sticky, so be careful!

🍪 Add 2 cups of finely powdered biscuits — I used Marie biscuits — followed by 300 ml sweetened condensed milk and milk. Let it come to a boil, stirring slowly.

🍚 Add ½ kg cooked Ada, followed by the carrot purée. Stir gently and add more sugar if you prefer it sweeter.

✨ Once it’s cooked and ready, add ghee-fried cashews & raisins and cardamom powder.

Let the payasam cool completely, then mix in the remaining 100 ml condensed milk before serving. 😋

A big pot of delicious payasam made with lots of love, laughter & family time! ❤️

Easy Biscoff Chocolate Pudding

A super easy, creamy and delicious dessert made with just a few ingredients! 😍 Perfect when you’re craving something sweet.

Ingredients:
• 250g Biscoff biscuits
• 150g chocolate (any chocolate bar you like)
• A handful of cashews
• 300ml warm milk
• 1 tbsp cornflour
• Cocoa powder, for dusting

Method:
Add the Biscoff biscuits, chocolate, cashews, warm milk and cornflour to a blender. Blend until smooth and creamy. 🤎

Transfer the mixture to a bowl or serving dish and refrigerate until chilled and set.

Dust with cocoa powder before serving. 🍫✨

That’s it! Your easy Biscoff Chocolate Pudding is ready! 😋🤎

IFFA Chicken Sticks Recipe

Juicy, spicy chicken sticks coated in a creamy, cheesy sauce! 🤤 Perfect with parotta, chapati, naan or your favourite side. ❤️

Chicken Marinade:
• 600g boneless chicken, cut into bite-sized pieces
• 2 tbsp chilli powder
• Juice of ½–1 lemon
• Salt to taste
• 1 tsp black pepper
• ½ tsp turmeric powder
• 1 tbsp ginger-garlic paste
• ½ tsp garam masala
• 1–2 tbsp cooking oil

Mix everything well and marinate the chicken. Thread onto skewers and cook until golden and nicely charred.

🔥 Air fryer: 200°C for 15–20 mins, turning halfway
🔥 Oven: 200°C for 15–20 mins, turning halfway
🔥 Open fire/grill: Cook until fully cooked and nicely charred.

Cheesy Sauce: 🧀
• 1 tbsp butter
• 1 tbsp oil
• 1 tbsp all-purpose flour
• 300ml cream
• ½ cup mozzarella or your favourite cheese
• 2 tbsp mayonnaise
• Salt & black pepper to taste

Cook butter, oil and flour on low heat. Gradually add the cream and mix until smooth. Add cheese, mayonnaise, salt and pepper, and stir until creamy.

Add the cooked chicken sticks, coat well with the sauce, cover and cook on low heat for 5–6 minutes.

Garnish with fresh coriander 🌿 and enjoy! 😍🔥

Easy Watermelon Brazilian Lemonade!

A super easy, creamy and refreshing drink you NEED to try! 😍

Ingredients:
🍉 A few chunks of watermelon
🍋 2 peeled limes
🥛 Sweetened condensed milk, to taste
🧊 Ice

Method:
Add the peeled limes and watermelon to a blender and blend until smooth. Strain the mixture, then pour it back into the blender.

Add sweetened condensed milk to your taste and blend again until creamy and frothy. 🥰

Pour over ice, serve chilled and enjoy! 🍉🍋✨
