You don’t realize how many shades of blue there are until you visit a Greek island like Ikaria 🌊

Harvest 2026 is underway! Last week, our friends at αfíαnєs wínєs harvested Fokiano for their ancestral- style pithari wine.

There is a special energy around the harvest season.
Grapevines ripen only once a year, so harvest is the pinnacle moment of an entire year’s worth of sun and rain.

The grapes begin their journey of transformation, and for us, this has always been a poignant symbol of our own inner lives.

Harvest serves as a grounding reminder that we are a part of nature, and that we too, embody transformation and the possibility to evolve into a more transcendent version of ourselves. 🍷✨

Once the grapes are harvested, they are de-stemmed and crushed by foot inside the granite press.

Sampling the freshly-pressed grape juice… heavenly!

The grapes are left for a few days in the press to begin their fermentation with native yeast. The skins and seeds are “punched-down” manually to make sure they have contact with the juice below. Skin contact increases color, aroma, and tannins to a wine.

Once the wine is fermented to about 70% completion, the juice is transferred into the amphorae (pithari), where it will finish fermenting and stay to age for up to 9 months.

Nikos is transporting the pressed grape skins to macerate with the juice inside the amphorae. The pithari red has a maceration period of about 60 days.

The remaining grape skins inside the granite stone press are passed through a basket press to squeeze the remaining juice out.

The juice continues to the amphorae and onto its journey of transformation ✨

August is here, which means harvest month in Ikaria 🍇

Tending to vineyards is a year-long process, and one that needs careful inspection, pruning, and protection of the biodynamic practices that we adhere by.

Harvest is a singular moment that comprises an entire year’s worth of culminated care. It is the hope of a winemaker realized; it is the continued covenant that man creates alongside nature.

Some of the oldest vines at αfíαnєs wínєs are pre-phylloxeric and date back over a hundred years. Every year that we are able to harvest from those vines is a sacred connection to the past, while creating something new for the future.

We are grateful to arrive at another harvest season and we wish all vineyard owners & winemakers a fruitful and abundant harvest! 🍇💪

Ikaria’s wild beauty continually reminds us of both the power and peace of nature.

The island forces you to slow down, to follow her rhythms, and to realize that sometimes doing nothing is time well spent.

Ikaria is the antidote to a world that views productivity as self worth. Here, you are worthy just as you are, without having anything to prove.

With summer in full bloom, we are enjoying long days of light, the buzzing of cicadas, and sharing bottles of wine with friends. We hope you take some inspiration from the island, and pause to remember the beauty of the precise moment you are in✨

At Odyssey, we believe travel doesn’t have to be a race from one attraction to the next. Here in Ikaria, we slow down, spend time with local producers, enjoy long lunches, swim in the Aegean, and leave room for the moments that can’t be scheduled.
