Haakh” refers to a group of leafy greens, most commonly similar to collard greens or kale.
It grows widely in Kashmir especially in Downtown and is a staple in many households.
Unlike heavily spiced Indian dishes, haakh is known for its minimalist cooking style:
* Mustard oil
* Whole dried green chilies
* A pinch of asafoetida (hing)
* Salt and water
