Kalam Polo Shirazi is a delicious and popular traditional food in Shiraz. It consists of cabbage, minced meat, chickpea flour, and different herbs such as tarragon, dill, basil, and leek. First, we fry a mixture of onion and chopped cabbage to become soft and golden. Then we add chopped vegetables and fried meatballs to the cabbages. Finally, we mix all the ingredients with rice and brew them together. This famous Shiraz food is served with either Shirazi salad or yogurt and greens.

The fragmentary Jurjir façade is located on a side wall of the Hakim mosque, a seventeenth-century structure which incorporated the tenth century fragment into its walls. The Buyid fragment was discovered during restoration work in 1955.
The façade fragment consists of a deep entrance portal framed by side walls that project the façade away from the portal datum. The wall surfaces of the façade and the side walls are articulated with a series of receding and projecting vertical elements.

NOWRUZ | PERSIAN NEW YEAR
Today spring will arrive and Persians everywhere will be celebrating Nowruz, first day of spring, and of its beauty and pleasant weather. This is the season to be in harmony with nature and put away the old and look forward to a new beginning. This is also the time to allow the warmth of the sun to help rejuvenate our creativity and shed the layers of dormancy. Starting from the time of the first Zoroastrians, this is the season that ancient Persians celebrated this changing of the season with well wishes for each other and for all that nature had provided for them. Happy Nowruz to all our friends in the world.

Every Iranian believes that their mom makes the best Ghormeh Sabzi in the world! Italy is famous for Pizza, Mexico for Tacos, and Korea for Kimchi but Ghormeh Sabzi, the national dish of Iran is second to none. The combination of the sour taste of dried lime, exotic aroma of Persian vegetables, and tender lamb meat on top of soft Persian rice is magical and lets you taste the essence of Persian culture in a single bite. This iconic meat and vegetable stew or as Iranians call it “Khoresht Sabzi” is the ultimate test of cooking skills and gets cooked in different colors, tastes, and styles.

Literally, Chahar bagh, or Charbagh means four-gardens and refers to two perpendicular paths that create four square gardens. Chaharbagh’s structure and design are notable examples of Persian gardens, encompassing green areas, pavilions and irrigation systems. 
Chahar bagh street is a Safavid street constructed between 1597 and 1616, during the reign of Shah Abbas the great. Chahar bagh was the most famous boulevard in not only Isfahan, the capital city of the time, but also in all of Persia. Although this legendary promenade has undergone a lot of changes, it still holds stories of those people who spent their days and nights in that refreshing boulevard.

Some dishes perfectly resemble their hometown, and Baghali Ghatogh is one of them. The green color and aroma of it take you to the gorgeous North of Iran, where everything is linked to the sea, forests, and agriculture. One of the most famous dishes from the North of Iran, Baghali Ghatogh, is an exotic meal for vegetarians who like to try Persian food. You only need to spend half an hour to blow the mind of your friends and family by serving them this wonderful meal.
Before having the first spoon, the aroma of garlic is the good news to tell you how unique this dish would be. After the first bite, you can feel the softness of beans, and then it’s time for the dill to introduce itself by its wonderful taste, then it comes to the egg to enrich the stew with its texture.

When a Persian mom wants to surprise her family or plan for an important dinner party, the only thing that comes to her mind is Fesenjan. The Persian Walnut Stew, Fesenjan, or Fesenjoon is the pride of Iranian cuisine. Sweet, sour, tangy, and rich, none of them can describe the real taste of this Persian delicacy.
