Orexis in Lavrio, Attiki, is the kind of restaurant you find because someone tells you about it. The greens come from a neighboring village. The fish comes from just off shore. The octopus Bolognese linguini is a dish I will remember for a very long time.

We drank a bottle of Moschofilero from Mantinea, a floral white from a pink-skinned grape grown at 750 meters in the Peloponnese. Elevated acid, light body, and exactly the w**e you want next to six plates of seafood in August.

The bill for four diners, w**e and tip included, would barely cover three cocktails in mid-town Manhattan. That’s the difference between eating well and eating expensively.

The crust is the entire point.

Schweinsbraten is the dish that defines home cooking across Tirol and Bavaria. Not restaurant food, not chef’s-table food: Sunday lunch at your grandmother’s table, the smell filling the house for hours. Every family has an opinion on the seasoning. Nobody argues about the crust.

It must shatter.

The technique matters: score the rind, salt it aggressively, start at high heat to blister the skin, then drop the temperature and let the pork braise low and slow until the meat pulls apart and the Kruste crackles when you tap it with a knife.

Pair it with a Grüner Veltliner Federspiel from the Wachau. The white pepper and acidity cut straight through the fat. If you want b**r, reach for a Märzen or dunkles Bier: malty, clean, built for the rich brown sauce on this plate.

Save this for your next Alpine kitchen experiment.
