Travertine in soft blocks, stacked warm-toned against a wall of lime-white plaster. Set into the niches, pumi in glossy ceramic — the little finials Puglia hands down for luck — line up like quiet guardians along the corridor.

This is the grammar of the villa: traditional materials, refined finishes, nothing shouting. Stone and light, shaped two ways — the rough honesty of travertine, the smooth white of a glazed form — held in balance across 310 square metres on two levels.

Details like these came from the work with architect Stella Maris Gonzales. Nothing is accidental here. Even a hallway is composed.

Have you ever watched orecchiette dry in the December sun?

Here they are, trays of them set out along a sunlit street in the Valle d'Itria — thumb-pressed into shape, laid on wood, left to firm in the winter air beside a small Christmas tree and its red ribbon. Pale gold, a few tinted green and orange. Little ears, each one made by hand.

This is Puglia's oldest culinary language. No machine, no hurry. Just flour, water, a worn knife and a practised thumb, repeated a thousand times until the tray is full.

Bring a bag back to the villa. Cook them simply — the way they're meant to be — and eat slowly in the park, the countryside stretching out in every direction. Food here isn't a performance. It's the rhythm of the place.

A narrow passage in travertine, lined with hand-shaped pumi set into recessed niches — the little ceramic good-luck finials of Puglia, placed one by one.

This is the kind of detail that runs through the whole house: traditional materials, refined finishes, a design shaped with architect Stella Maris Gonzales. Local stone underfoot, soft plaster walls, light moving slowly through the day.

Beyond the glass, one of the five en-suite bedrooms waits. Linen turned down, the quiet of twenty thousand square metres of private park just outside.

A fork breaks the crust first — that golden, crackled layer of breadcrumb and parsley, the sound of it sharp against the glass.

Underneath, potatoes gone soft and sweet, lamb that has given up everything to the oven. This is Puglia's teglia: layered, patient cooking, the kind that asks for nothing but time and good ingredients. Olive oil from these hills. Herbs picked a few steps away.

You eat it slowly, outside, the afternoon folding into evening around the table. No ceremony. Just the food, and the people you came here with.

Pull a chair close to the fire. What do you notice first?

The black-framed hearth set into white plaster. The niche shelves beside it, holding copper and ceramic the way a Puglian house has always done. A low daybed under the window, cushions the colour of stone and smoke. A round table of weathered wood between them.

This is the living room — the heart of 310 square metres built across two levels, with panoramic windows rare for this part of Puglia. Traditional materials, finishes chosen with care, a space shaped alongside architect Stella Maris Gonzales of Dolce&Gabbana.

Light moves through it all day. In the evening the room softens into something quieter, lit for the hours that don't ask anything of you.

Autumn is the Valle d'Itria's best-kept secret: fewer crowds, mild light, a still-warm sea. Here's what's actually on this week across the Two Seas — plus day-trips to save for your stay.

1. Monopoli's old town becomes an open-air gallery — PhEST – See Beyond the Sea, 11th edition, 'What If?', with Roger Ballen, Vivian Maier & Joan Fontcuberta (closed Mondays).

2. Books spill into the whitewashed alleys — Monopoli's 22nd Festa dei Lettori runs until 14 October, with readings at the Biblioteca Rendella.

3. Martina Franca, home of the celebrated Festival della Valle d'Itria since 1975 — wander its Baroque old town in the quiet off-season.

4. One unhurried day, three jewels: Baroque Martina Franca, hilltop Locorotondo and whitewashed Cisternino, all a short drive apart.

Butchers invented the bombetta. In the Valle d'Itria — and nowhere more than around Martina Franca and Cisternino — the macellerie doubled as grill rooms, and the clever cut was born from this: thin slices of pork rolled around a knot of caciocavallo, skewered, then set over coals until the cheese runs molten inside. You order by weight at the counter, then wait while the smoke does its work.

It's a tradition built on proximity — the butcher, the fire, the table, all within a few steps of each other.

We keep that spirit here. The outdoor kitchen sits open to the patio, the coals close enough to smell, dinner served where the evening air carries the pork and cheese across the Trani stone. A ten-minute drive to Martina Franca if you want the originals from the source.
