Buckets in hand, this family is out milking mares, the first step toward AIRAG, Mongolia's fermented mare's milk and about as central to a Mongolian summer as anything gets. Mares only produce milk for a few months out of the year, so during that window, milking happens several times a day, every day. Once collected, the milk gets fermented, traditionally in a leather sack, stirred by hand for hours until it turns slightly sour and faintly fizzy. Out here, airag is a summer staple, and a lot of the times a core memory for many of our travelers.

At the far end of Erdene Zuu Monastery in Kharkhorin stands the Lavrin Temple, a three story Tibetan style building rebuilt in 1875 on the foundations of an earlier version. It's still a working monastery, not a preserved relic behind glass. Morning ceremonies here start most days around eleven, and on any given afternoon you might catch young monks out doing the unglamorous work of keeping the grounds together instead of sitting in prayer. The monastery itself dates back to 1585, built in part from stones taken from the ruins of Karakorum, the ancient Mongol capital, just down the road.

Picture waking up to this. Khuvsgul at first light, the fog still sitting low over the gers, your phone with no signal and nothing on it worth checking anyway. No calls to return, no inbox piling up (at least for now), just the sound of the grass moving and your own breathing. A lone herder rides past on his horse, slows for a second, gives you the kind of curious look two strangers trade at that hour, then disappears back into the fog. You're just about to have your first sip of coffee.

There's a version of this photo in farming country almost anywhere in the world. A kid in rural Kansas driving a truck across a field before he's old enough for a license. A kid in the Vietnamese countryside weaving a motorbike between rice paddies before his feet fully reach the pegs. Out here in Mongolia, it's trucks, motorbikes, horses, and a yak pulling an old wooden cart, whatever the work calls for that day. Different countryside, different machines, same thing being taught without anyone really teaching it: if it moves and it's useful, you learn to handle it.

The circular opening at the top of a ger is called the toono, and it is the most important structural element in the whole dwelling. It is the skylight, the ventilation, the chimney hole, and the compass all at once. Mongolians orient themselves inside a ger by its position: the toono tells you which direction you are facing, and tradition governs where guests sit, where the host sits, and where you do not walk.

The lattice walls beneath it, called khana, are made from thin strips of wood cross-laced and pinned at the joints. They fold flat for transport and expand into a circle when assembled. A family can pack and move an entire ger in a few hours.

The same wooden structure that holds a family's home together holds their laundry while it dries.

The Gobi is not what most people picture. It is not an endless sea of sand dunes. It is mostly gravel plains, dry riverbeds, and rocky escarpments, with dune fields appearing only in certain places. Khongoryn Els, known as the Singing Sands, is one of them.

Stretching roughly 180 kilometers through the southern Gobi, Khongoryn Els is one of the largest dune systems in Mongolia. On strong wind days, the sand moves and produces a deep humming sound that carries across the desert. Locals have had a name for it for centuries.

The Gobi spans parts of both Mongolia and China and covers an area larger than most European countries. Temperatures swing between extremes: summer days above 40 degrees and winters that drop below minus 40 degrees. The animals and people who live here year-round are adapted to conditions that most visitors experience only briefly and in the milder months.
