Each terrace was carefully designed with layers of stone, gravel, sand, and fertile soil, creating an efficient drainage system that has preserved the site for centuries.

Archaeologists believe Moray was an experimental farming center where the Incas studied how crops adapted to different climates.
The circular terraces create unique 𝗺𝗶𝗰𝗿𝗼𝗰𝗹𝗶𝗺𝗮𝘁𝗲𝘀, with temperature differences of up to 𝟱°𝗖 (𝟵°𝗙) between the highest and lowest levels. This allowed the Incas to improve the cultivation of crops such as:

El Chiri Uchu es uno de los platos más representativos de la gastronomía tradicional del Cusco y constituye un símbolo de identidad cultural que ha sido preservado durante siglos. Su nombre proviene del idioma quechua: "Chiri" significa frío y "Uchu" significa ají o comida picante, por lo que su traducción más aceptada es "ají frío" o "comida fría".

Origen e Historia

La historia del Chiri Uchu se remonta a la época colonial, aunque sus raíces se encuentran en la fusión de las tradiciones gastronómicas incas y españolas.

Antes de la llegada de los españoles, los incas ya consumían diversos alimentos conservados naturalmente, como el charqui, el maíz tostado (cancha), el cuy y otros productos andinos. Con la llegada de los europeos se incorporaron ingredientes como la gallina, el queso fresco, el chorizo y nuevas técnicas culinarias.

Esta combinación de ingredientes andinos y europeos dio origen a un plato único que representa el encuentro de dos culturas.

Relación con el Corpus Christi

El Chiri Uchu está estrechamente vinculado a la festividad religiosa del Corpus Christi, una de las celebraciones más importantes del Cusco.

Durante esta festividad, que se celebra aproximadamente sesenta días después de Semana Santa, las imágenes de quince santos y vírgenes provenientes de diferentes parroquias ingresan a la Plaza de Armas de Cusco para rendir homenaje al Santísimo Sacramento.

Mientras miles de fieles participan en las procesiones y actividades religiosas, el Chiri Uchu se convierte en el plato tradicional por excelencia de la festividad.

¿Por qué se consume frío?

Antiguamente, los peregrinos y participantes de las celebraciones debían recorrer largas distancias para llegar a la ciudad del Cusco. Debido a la falta de sistemas de conservación modernos, los alimentos se preparaban con anticipación y se consumían fríos.

Esta costumbre dio origen al nombre y a la tradición de servir el Chiri Uchu sin necesidad de calentarlo.

El Chiri Uchu es considerado un plato mestizo porque reúne ingredientes de distintas regiones del Perú:
