Knife Skills! My students understand that flavor isn't the only thing that makes a dish great. Texture and uniformity are SO important. Your tongue and mouth have to 'feel' the food as much as 'taste' it. And that's where good knife skills come in.

Learn various cuts, safe handling and storage and other fun, important skills in this class. Only 4 more classes through June:

Sabudana Khichadi - 2 words that evoke so much emotion based on where you grew up, that the pressure on who's making it is emmense 🤣 - is a savory dish of tapioca pearls seasoned with peanut powder and fresh coconut flakes.

The ONLY way to make a mean Sabudana Khichadi is to get all these elements right. A goopy, sticky sabudana is a no go. An insipid khichadi denied of heaps of peanut powder is also no deal.

Pro Tips 👇🏽
1. The tapioca/sago pearls (sabudana) simply have to soak right. They should swell to about 3 times their original size and should be lose and non-sticky
2. Even if you're using roasted peanuts, definitely slow roast them some more till they are darker and crunchier
3. Make your own ghee!
4. When you crush the roasted peanuts, make sure the powder stays dry and not oily
