The late February is a wonderful time to visit Tsukigase Plum Valley in Nara Prefecture. There are 10,000 pink and white plum trees have been there since the 13th century. We found a place to tasty teas with smoked and sun dried plums called “Ubai”: the disappearing traditional local product. There is only one producer of Ubai remaining in the town. •

Tempura is essentially anything that’s been battered and deep fried. I think it’s more often associated with casual and quick dining. But at Tempura Kondo in Ginza Tokyo, you will change the assumption right away. There are two small rooms with counter seating. Maybe 20 seatings altogether. You sit facing your tempura chef as he fries one item and place it into your plate. And you to eat it with salt, lemon juice, or tempura sauce. He repeats the process until you are full! Their tempura has a paper-thin crust that is delicately crispy. Not a bit greasy. The flavor of each item explode in your mouth. The chef must be fanatical about the raw ingredients he uses because he cannot hide imperfections with spices or thick sauce. The freshness and true flavor of the ingredients are truly showcased here. The sweet potato tempura is the must. Again, the subtle sweetness and amazing texture are nothing you ever tasted before. •

Last week Marina Giordano, sake instructor from WSET, taught us sake is designed to enhance umami flavor of almost any dishes. Some sake eve goes so well with pickled veggies or wagyu steak! Would you like to go to Japan next year to do sake brewery hopping? 😊🍶

Yesterday, my customers who had a long layover at the Osaka Airport, asked me where they could go for a quick lunch in downtown Osaka. Their email said, “How about soba?” So, I replied, “Would you mind trying an udon place instead?” Generally speaking, udon is a more popular choice in the western Japan. So, I recommended Kasuya udon counter near Namba station. A few hours later, they sent me these photos. They look absolutely delicious! I can’t believe the color of the egg york! •

In the middle of rice fields in Tsubame Sanjo in Niigata Prefecture, there is a factory Suwada that makes nail clippers. Yes, nail clippers! The Suwada nail clipper is something you need to experience to understand to appreciate it. This “bonsai” is made out of discarded scrap metal from the factory. My customers just sent me this beautiful photo from there. Would you like to go to Tsubame Sanjo? Kojima Travel help plan off-the-beaten-pass Japan vacations for you![ ]

A breakfast feast at Hikage Onsen in Northern Akita near Odate city. The hotel was a true hidden gem. It is in the middle of thick forest and I saw Hinai chickens were running around on the ground. I thought their natural hot spring was the only major appeal here, and I wasn’t expecting much for dinner or breakfast. I was so wrong! The carefully prepared meals with all fresh local ingredients were beyond impressive. Do you want to go to Akita with us?
