Spain and Portugal are the kinds of places where you'll find yourself saying, "Can we stay just a little longer?" An afternoon spent wandering the colorful gardens of Pena Palace, a leisurely meal in a Spanish plaza that turns into an evening of lively conversation, the sound of Fado music filling a Lisbon restaurant, or a glass of local w**e overlooking the terraced vineyards of Portugal's Douro Valley will draw you in and make you want to stay for a while.

That's not even including the sights you've probably been dreaming about for years, like Barcelona's extraordinary architecture, the Alhambra in Granada, and the historic streets of Seville.

When you visit Ireland, Scotland, or Northern Ireland, your favorite memories might not be the ones you expect.

Of course you'll love reminiscing on standing along the breathtaking Cliffs of Moher, exploring the halls of Edinburgh Castle, or marveling at the remarkable Giant's Causeway. But you'll also treasure the evening you spent listening to traditional Irish music in a cozy pub, the stories shared over a delicious meal, the working sheepdogs that stole the show in the Scottish Highlands, or the friendly locals who made you feel right at home.

Recently, a few of our guests in Ireland had the pleasure of enjoying a private cooking class with renowned Irish chef Catherine Fulvio at Ballyknocken Cookery School. Now, they'll get to see a familiar face on national television!

Catherine has been invited to showcase Irish cuisine on NBC's TODAY Show with Jenna Bush Hager during a special live broadcast from County Kerry on Friday, October 16! If the TODAY Show is heading all the way to Ireland to celebrate its cuisine, you know there's something special cooking. 😉

We love that our guests get to enjoy unique experiences like this and meet some pretty incredible people along the way.
