Chef Aurรฉlien Dufour was born amidst the rich food and wine culture of Bordeaux, and spent his childhood in Germany where he was introduced to the charcuterie tradition. Aurรฉlienโ€™s natural talent for charcuterie was apparent, and he learned from the talented Chef Gรฉrard Berranger, a Meilleur Ouvrier de France-distinguished Charcutier (the highest and most prestigious award in France in the food in

dustry). There, Aurรฉlien learned the technique and tradition of French charcuterie, steeped in history, with recipes passed down over generations. He mastered pรขtรฉs, terrines, galantines, ballotines, crรฉpinettes and sausages, and also participated in many charcuterie competitions. He won second place at the prestigious Best Young Chef in Charcuterie award at age 19 and has since placed within the top 3 in every competition. Aurรฉlien Dufour has worked in the food industry for nearly 15 years, including six years in New York City, as Chef Charcutier for the prestigious Chef Daniel Boulud and his restaurant group. Since his debut in NYC, Aurรฉlien has gained recognition from the press and has upheld a strong reputation amongst his industry peers for the quality of his work, his dedication, and exceptional savoir-faire that only very few know in the United States. In 2013, Aurรฉlien was recognized by Star Chefs as a Rising Star in the Artisan Category, was also named by Zagat, the reputable restaurant guide, as a 30 under 30 Best Chef. โ€ขIn a separate nonstick or cast-iron pan, heat 1 tablespoon of vegetable oil (and/or butter) over medium heat until slightly simmering, and add the Sausages.
โ€ขCook each side for about 5-8 minutes.
โ€ขOnce fully cooked (reaching an internal temperature of 165ยฐF), turn off the heat and cover.
โ€ขYou can also poach them and sear: Keep the sausages vacuum sealed and poach them in simmering water for about 5-10 minutes.

โ€ขPre-cook the Seasoned Ground Pork (Chair ร  Saucisse) on a pan with butter/cooking oil. Stir to create crumbles/chunks of meat.

โ€ขIn order to make a Filet Mignon-Tenderloin en Croรปte, you need a puff pastry (to find at your local specialty store), and mushrooms, shallots, garlic, thyme, salt, pepper.

โ€ขStart by chopping the shallots and garlic to cook on a pan with butter or cooking oil on low heat.

โ€ขIn the meantime, wash and slice the mushrooms. Once the shallots and garlic are cooked, add the mushrooms and a bit of thyme on medium heat. Once this preparation is fully cooked, let it cool down.

โ€ขThe next step is to season the filet mignon by spreading a pinch of salt and prepper around it.

โ€ขHeat up a sautรฉe pan to sear the filet mignon on each side. Let it cool down.

โ€ขNext is to chop the mushroom preparation finely in duxelles as it will be placed between the meat and the pastry dough.

โ€ขYou can now start to assemble the dough, the meat and the duxelles. Place your sheet of dough flat on parchment paper - large enough to wrap the entire filet mignon but not too big to overlap (should only overlap about 1" thick).

โ€ขCover the dough with the chopped duxelles - leave some space on the edges. Add the seared filet mignon in the center.

โ€ขBrush the edges of the dough with egg wash.

โ€ขRoll the dough over and seal completely - trim the ends if necessary (should only overlap about 1" thick).

โ€ขPlace it seam side down on a sheet pan. Brush egg wash over the entire pastry. And if you want before placing it in the oven you can decorate with leftover puff pastry dough.

โ€ขBake at 350ยฐF until the pastry is brown and use an internal thermometer to reach 145ยฐF before serving (to obtain a slight pink color in the center, the core temperature must reach 143.6ยฐF.
