This month, I feature a wonderful recipe from Amalfi, Italy, called Babàs al Limoncello Pansa. This recipe is from the famed family-owned, fifth-generation Pasticceria Pansa, and I couldn’t get over how light and lemony their babàs were.

I begged chef and Italian television personality, Velia de Angelis, for the recipe, and she generously obliged. With a light lemon crema and soaked in a limoncello liqueur syrup, the babàs will maintain their moistness for several months, making them perfect to enjoy whenever you’re ready.

The Waldorf Salad was created in the 1890s at the Waldorf-Astoria Hotel in New York. Maitre d’, Oscar Tschirky, was the mind behind the salad. While he published the original in his 900-page cookbook, this is my variation on the Waldorf Salad, substituting some ingredients out to make it lighter.
