Muirhead Canning Hood-Crest Fruit

Muirhead Canning Hood-Crest Fruit Premium tree-ripened canned peaches, pears, apricots, cherries and plums. We bottle applesauce, apple butter, and diced tomatoes.

Custom canning, freeze drying, and jam services also available. Hood-Crest Fruit is a taste of the good ol' days when attention to detail and quality were the norm. Hood-Crest Fruit has been enjoyed at dining room tables around the Northwest and beyond since 1946. What makes Hood-Crest fruit so great?

::Quality Fruit:: Our fruit comes from local Northwest orchards. The volcanic soils of our area

and mild climate create fruit that is unsurpassed.

::Quality Growers:: We work with wonderful growers who take pride in the quality of their fruit. By carefully monitoring their orchards they are able to pick the fruit at the perfect moment for canning and carefully transport the fruit to the cannery (sometimes just a trip down the hill!)

::Traditional canning process:: Hood-Crest Fruit is canned at the last remaining small, family operated cannery in the Northwest - the Muirhead Canning Company. Fruit is canned just like at home. Fresh, ripe fruit is handled with care and packed by hand into cans where it is sealed and heated in a hot water bath to preserve the premium quality and flavor.

::Our customers:: While you can find Hood-Crest Fruit at select stores and fruit stands around the Northwest, our main customer base are individuals who have tried our fruit, loved it, and loyally order fruit for home delivery each fall. We have *the best* customers around!

::Delivery:: Each fall we deliver fruit to the door of our Northwest customers. Russell Loughmiller, owner of the cannery and Hood-Crest Fruit, is often at the wheel meeting new customers and saying hello to old friends.

There's a lot of activity here at the cannery today; we're working on a few different things, canned peaches and peach butter being a few. But what's shown here is preparation for freeze-dried grapes. Before they are placed in the machine, we use this roller over the grapes so that they are slightly punctured. This is so the moisture can escape and prevent the grapes from rupturing during the freeze-drying process. I'm very satisfied with how all the freeze-dried fruit has been turning out. -Dylan

All this month so far we've been doing custom canning and today is no different. Today we're making diced tomatoes. The tomatoes are sorted, have their stems and cores removed, blanched, peeled, diced, and then cooked. As they're cooking lemon juice is added to help keep the color and have the tomatoes at the right acidity. Salt is also added for taste. The last photo I have the finished product, still hot. The color in these is just incredible. -Dylan

We're canning peaches and making peach butter today at the cannery. Containing peaches, sugar, lemon juice, and cinnamon, this batch here has been cooking for about 7 hours to thicken to this consistency. Hopefully I can get a jar for myself because it smells amazing.

More and more lately, we've been preparing and making freeze-dried fruit for ourselves and different businesses. Shown here, we have some nectarines being prepared, and then those nectarines and grapes currently freeze-drying today. Also shown are some finished freeze-dried peaches from earlier this week. It's been a good, smoke-free day here at the cannery today. Seen here are some nectarines we're going to be freeze-drying for Aspinwall's Nursery & Produce. These are now sitting in our regular freezer to be frozen before they are placed in the freeze-drier to finish that process. -Dylan

After the fruit is sorted and placed into the cans, they go through this smaller conveyor where the syrup drips into the cans. It's important to make sure the each can travels through this conveyor unobstructed so that they each receive the correct amount of syrup. Then the cans go through the water packer that fills the rest of the cans with boiling water, ensuring there is not much spillage so as to not dilute the desired sugar content. -Dylan
