We are thrilled to present Chef Ruffo Ibarra from Oryx Restaurant, who will guide us through preparing a delicious Shrimp & Pineapple Aguachile. This vibrant and refreshing dish is perfect for summer, combining fresh seafood with the sweetness of pineapple and a zesty kick from chiles and lime. Below are the ingredients you'll need to prepare beforehand.
Ingredients:
• 1 lb Shrimp or Yellowtail fillet
• 1 Pineapple
• 3 oz Lime juice
• 2 garlic cloves
• ¾ small white onion
• 1 small red onion
• 2 serrano chiles (optional)
• 1 jalapeño chile (optional)
• 1 cup cucumber
• 1 bunch cilantro
• 1 avocado
• Vegetable oil
• Salt to taste
