If you’re thinking about how to do Christmas a little differently this year… may I suggest doing it a lot differently? Have you considered a white wonderland with vistas that stretch into the wilderness, champagne and exquisite meals served around a table that harks back to the great explorers? Or venturing out to do something you have never done before around White Desert’s unique Whichaway Camp and Wellness Dome, in Antarctica?

Had the chance to tryout The Lodge at Blue Sky’s “WildKitchen”.

The space and dining tent are well executed, unfortunately Guy Ritchie’s concept may be more form over function when it comes to the food preparation.

The dining experience was disappointing. Maybe next year all the kinks will be worked out, it shows a great deal of promise.

What You Need to Know:
We are thrilled to present Chef Ruffo Ibarra from Oryx Restaurant, who will guide us through preparing a delicious Shrimp & Pineapple Aguachile. This vibrant and refreshing dish is perfect for summer, combining fresh seafood with the sweetness of pineapple and a zesty kick from chiles and lime. Below are the ingredients you'll need to prepare beforehand.

Ingredients:
• 1 lb Shrimp or Yellowtail fillet
• 1 Pineapple
• 3 oz Lime juice
• 2 garlic cloves
• ¾ small white onion
• 1 small red onion
• 2 serrano chiles (optional)
• 1 jalapeño chile (optional)
• 1 cup cucumber
• 1 bunch cilantro
• 1 avocado
• Vegetable oil
• Salt to taste

Remember to have a cutting board, sharp chef's knife, blender, and pan or griddle ready! Join us as Chef Ruffo walks us through every step to bring this dish to life. Make sure you're prepped and ready for a fun and delicious cooking experience!
