🍦 National Ice Cream Month – Day 30: Buckeye Ice Cream

Chocolate and peanut butter are hard to beat, and today’s recipe brings them together in an ice cream inspired by classic Buckeye candies. It starts with creamy peanut butter ice cream and adds chocolate fudge ribbons and chunks of chocolate covered peanut butter candy.

Ingredients
1 batch of the homemade ice cream base from Day 1
¾ cup creamy peanut butter
1 teaspoon vanilla extract
¼ teaspoon salt
¾ cup chocolate fudge sauce, chilled
1 cup chopped Buckeye candies or peanut butter cups

Directions
Place the peanut butter in a mixing bowl and gradually whisk in about one cup of the prepared ice cream base until smooth.
Stir the peanut butter mixture back into the remaining base. Add the vanilla and salt.
Churn according to your ice cream maker’s instructions.
During the final minute, add half of the chopped candies.
Transfer one third of the ice cream to a freezer safe container. Drizzle with fudge sauce and sprinkle with additional candy pieces.
Repeat the layers, then gently swirl everything together with a butter knife.
Freeze for 2 to 4 hours before serving.

This one is rich, creamy, and packed with enough chocolate and peanut butter to make dessert feel like a celebration.
