The final night of our final charter onboard Olivia Charles!!!! I have so many photos to share from our incredible week with our amazing 3x returning guests, but I wanted to share our final evening with you first as we wanted it to be really special.
I planned and created a delicious tasting menu, and Tommy did any amazing job of wine pairing for each dish. For the soup course, I recreated an absolutely delicious dish we eat as they kindly gave me the recipe. I used locally sourced ingredients as much as possible. The lobster was Anegada Caribbean Spiny lobster, the herbs and microgreens were from freshly picked on Tortola.

Happy 100th Birthday Sir David Attenborough 🎂🎈🍾.
Some of you may not know this, but as well as a chef, I am also an artist and this is one of my real passions. Part of my double award degree at university was in art. Some of you may have been gifted a print of the yacht we work on painted onto a chart of the Virgin Islands, but I have also done many other commissions. Above you can see a picture of one such commission for the Royal Parks in London, which my sister took Sir David Attenborough to go and look at!!!!

What an amazing start to the charter it has been for our guests. It’s day 1 and they had champagne on arrival, and then some dolphins came to greet them in Nanny Cay Marina right next to the boat and then we had 40th birthday celebrations for the rest of the day 🎂🐬🥂🍾.
