In Vietnam, food is never just about eating.
It is about sitting together, sharing stories, laughing over small mistakes, and creating something with your own hands.

With Avivu, guests are invited to experience one of Vietnam’s most loved dishes: Chả Giò / Vietnamese Fried Spring Rolls.

From Vietnamese family tables, spring rolls have travelled far beyond Vietnam.

Today, Vietnamese spring rolls are loved in many parts of the world — from Vietnamese restaurants in the United States, to Asian eateries and family meals in France, where they are widely known as “nems”. In some parts of West Africa, especially Senegal, nems have also become a familiar street food and party snack.

That is what makes this dish so special.

It may look like a small crispy roll, but inside it carries a story of family meals, migration, cultural connection, and the way Vietnamese flavors continue to bring people closer across countries and generations.

At Avivu, you will not just watch a cooking demonstration.

🥕 1. How to make it – Preparing and rolling

Guests will learn how to prepare fresh local ingredients, mix the filling with herbs, vegetables, meat, seasoning and spices, then wrap everything carefully in rice paper.

Rolling spring rolls looks simple, but it is also the most fun part.
Not too loose, not too tight — just enough to keep the filling inside and help the roll become crispy when fried.

🔥 2. How to cook it – Frying until golden and crispy

You will also learn how to fry spring rolls properly: keeping the oil at a medium heat, around **160–170°C**, so the rolls cook evenly without burning too quickly.

The spring rolls are usually fried for about 5–7 minutes, until the outside turns golden, crispy and firm.
You will know they are well cooked when the color becomes beautifully golden brown, the surface is crisp, and the rolls feel light and crunchy when lifted from the oil.

For extra crispiness, they can be fried twice: the first time to cook the filling, and the second time briefly to make the outside even crispier.

🥣 3. How to make the dipping sauce – The soul of Vietnamese spring rolls

A good spring roll is never complete without dipping sauce.

For 4 people, you can start with this simple Vietnamese dipping sauce recipe:

• 2 spoons of warm water
• 1 spoon of fish sauce
• 1 spoon of sugar
• 1 spoon of lime juice or rice vinegar
• Minced garlic and chili, depending on your taste

Mix until the sugar dissolves, then adjust the flavor.
A good dipping sauce should be balanced: a little salty, a little sweet, a little sour, and lightly spicy.

Each roll may not look perfect at first — and that is the best part.
Because behind every spring roll is a little fun, a little culture, and a warm memory to bring home.
