Unlike light Western roast profiles that emphasize high acidity, authentic Vietnamese coffee roasting is a masterclass in patience, heat control, and unlocking bold, caramelized depth. Here is how local artisans craft that signature aroma:
- The Pursuit of the Dark Roast: High-grade Robusta beans are roasted to a deep, dark brown. This slow caramelization breaks down harsh bitterness and transforms it into rich notes of dark chocolate, toasted hazelnuts, and smoky molasses.
- Listening to the "Cracks": Our roaster watches the heat meticulously. Passing the "first crack" and carefully timing the "second crack" is where the essential oils rise to the surface, sealing in that intense, room-filling fragrance.
- The Art of Degassing (Resting): Once roasted, fresh beans need time to "breathe." Letting the beans rest for 24 to 48 hours allows the complex aromatic compounds to settle and mature before grinding.
